I think this name should be transcribed as Everiss. That's what the handwriting seems to say, although admittedly it's difficult. An old-fashioned method of writing double 's' was what looks like 'fs' ('f' without the cross-bar). Add to that that the letters 'r' and 'v' are highly confusible in many people's handwriting.
There was a well-documented Everiss family living in the Manawatu at the time, with its centre at Beaconsfield, near Feilding. I have not so far, however, been able to trace a Charlotte Everiss.
